Recipe Name – Hummus with tahini
Introduction – Hummus is very famous Middle Eastern vegetarian dish which is made using simple ingredients. Today i am sharing authentic recipe of hummus with tahini paste. Tahini is a simple paste made using only 3 ingredients. So let’s get started.
What all do you need?
For Tahini
- Sesame seeds (white) – 100 gm
- Extra virgin olive oil – 3 tablespoon
- Salt – as per taste
For Hummus
- Chickpeas (soaked & cooked) – 250 gm
- Lemon juice (fresh) – 60 ml
- Tahini paste – 60 ml
- Garlic (roasted & minced) – 3 to 4
- Extra virgin olive oil – 2 tablespoon
- Cumin powder – ½ teaspoon
- Salt – as per taste
Method (Tahini paste) –
- Toast sesame seeds lightly till they are light brown in color & fragrant.
- Let them cool down and then grind in the mixer grinder.
- Add olive oil and salt and grind again to make a smooth paste.
- Tahini paste is ready
Method (Hummus) –
- Add tahini paste & lemon juice in the food processor or mixer grinder and process for 1 min.
- Now add roasted & minced garlic, olive oil, cumin powder & salt and process again for 2-3 min.
- Now add chickpeas in two batches & process till the time mixture is smooth and well processed.
- Add 3-5 tablespoon of water and process to make it smoother.
- Now sieve this mixture using wide mesh strainer to make your hummus silky smooth. This step is optional though.
- Hummus is ready. Drizzle generously with extra virgin olive oil, paprika powder before serving.
- Enjoy with pita bread or toasted normal bread.
Tips –
- To make your hummus smooth, remove soaked chickpeas outer layer or use canned chickpeas or you can even sieve hummus (just like I did).
- Tahini is integral part of Middle Eastern cuisine and I would suggest to use it while making hummus.
- Tahini can be stored in the air tight container in the refrigerator.
- You can also store hummus in air tight container in the refrigerator and can consume it for 2-3 days.
- Though hummus is widely eaten with pita bread, you can also eat it with parathas or toasted bread or can even use in the sandwich with veggies.
